Easy Hearty Ham and Cheddar Potato Soup Recipe

It’s no secret that in the past my husband has hated soup.

So creating a soup recipe that he likes took me something like fourteen years…..

But I figured it out! I kept searching through recipes and adjusting ingredients to make it my own.

After some trial and (delicious) error, I create a simple recipe that is extremely versatile too.

Drum roll please…

Welcome Ham and Cheddar Potato Soup Recipe!

It has the best of all worlds!

It’s versatile, filling, easy to make, and incredibly delicious.

After frying ham chunks and diced potatoes in a little butter, how can the recipe go wrong with  my meat-and-potato-loving husband?

 

Add water and simmer until the potatoes are almost cooked through (you don’t want them to be mushy -gross!- and they will keep cooking during the next parts).

The golden brown color is complements of the butter!

 

Add milk and seasonings then add flour mixture to thicken and simmer.

Stop a moment to enjoy the beautiful smell coming from your stove top!

 

Now for the most delicious part!

Everyone that knows me knows that I absolutely love cheese in my cooking and this recipe revolves around the cheddar cheese!

 

Add some bacon bits and a dollop of sour cream and get excited!

My family devoured the soup before I could finish serving scones and cold pressed apple juice with it!

 

The most important thing I learned making this soup is that soups are so versatile (and forgiving!).

I tweaked almost everything about the different recipes to make it work for my family.

(We can’t use real onions in most cooking, we never peel our potatoes because we like the taste and texture of keeping the peel on, we prefer to grind our own salt and pepper).

Now that I know the sky’s the limit, I can’t wait to try variations of this recipe!

 

NOTE: If you have a picky eater (or a spouse that scoffs at a soup being the main dish, lol) make sure to change up your sides.

Soups can pair with sandwiches, a huge variety of rolls, scones, and salads. Just get creative.

With a large family, we are going to rotate through everyone’s favorites (BLTs, bread bowls, scones, whole wheat dinner rolls, panini sandwiches, King’s Hawaiin Rolls) and are always looking for something new to try.

Update: Since creating this recipe I have taken it to family parties, potlucks, and community dinners.

It has vanished every single time and people find me to ask me for the recipe.
