Chicken Spinach Artichoke Dip

If you find yourself standing in the grocery store trying to figure out a crazy fast dinner for a mob of children on a budget, you might be a mother.

I am HUGE on Meal Planning and we do a pretty good job of planning out our meals every week to make life easier but there are always days when even the best crafted meal schedules falls apart fast.

One day I found myself racing against the clock as I ran my final errand before I had to go pick up children from school.

Once the kids get out of school, there is NO time to make a fancy dinner so I knew I had to find something that took less than ten minutes to prepare.

As the name of my blog implies, I can only take motherhood ten minutes at a time most days.

That was an especially crazy day and our schedule was full after school, so I was on the lookout for something incredibly easy to prepare.

I spotted some yummy looking Spinach Artichoke Dip but I knew from experience that the flavor was too strong for my children’s taste.

I was trying to consider how to tone down the strong taste and how to add protein to it so I could call it dinner when I had an idea.

I grabbed the Spinach Artichoke dip, a rotisserie chicken, some cheeses, and some white corn tortilla chips.

When we got home I sprayed a glass 9×13 baking dish and lined the bottom of the dish with pulled rotisserie chicken pieces.

Then I covered the chicken with the Spinach Artichoke dip and then cheeses on top.

Life is too short to skimp on cheeses; please plan accordingly…..

Add some Italian spices on top and pop it into the oven until it is heated through and the cheeses have melted.

Presto!

We had a hot delicious dinner and I was right about the chicken and cheeses making the taste of the dip more mild.

Every single kid loved it (big win!) and it was basically an instant dinner.

We try to plan ahead with our meals but when life throws you a curve ball at dinnertime, you may have to improvise.

Chicken Spinach Artichoke Dip

For a delicious and savory dip full of protein and veggies, try this today!

Ingredients
  

  • 1 whole Rotisserie Chicken shredded
  • 32 ounces Spinach Artichoke Dip
  • 2 cups Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1 Tablespoon McCormick Perfect Pinch Italian Seasonings
  • 1 bag White corn tortilla chips

Instructions
 

  • Spray 9x13 glass baking pan.
    Layer shredded chicken on bottom and cover with Spinach Artichoke dip.
    Top with mozzarella and Parmesan cheeses and sprinkle Italian Seasonings on top.
    Bake for 20 minutes in 350 oven, or until hot and bubbly.
    Enjoy with family and friends!

    This looks so yummy and easy! Thank you for sharing! Another rotisserie chicken meal we love is chicken gnocchi. You can also used can chicken if you need it to be made even quicker. Gnocchi boils in 1 min or until they float up to the top of the water – so fast! I heat the chicken in a pan or pot with petite diced tomatoes, drained canned spinach and pesto to taste. Then mix the gnocchi in once you take the chicken mix off the stove. Serve right away or put in the fridge for a quick heat up. Enjoy! 😘

    Oh my goodness, I LOVE spinach artichoke dip! I can honestly say that I have never had it with chicken though…so I am excited to try it!
