We don’t always eat casseroles, but when we do…..
They are fantastic!
This is one of my family’s “Silent Dinners”.
A “Silent Dinner” is one that my kids like so much that no one talks while they are eating because they are so pre-occupied with how good it is!
Instead of squabbling over the color of the cup they were given or inventing ways to distract themselves and their siblings from ever finishing dinner, our dining room falls silent.
It’s the ultimate compliment to the chef!
When we were first married and I made this for my husband, he loved it so much that he has requested it regularly ever since.
We have made a few tweaks over the years and now it is positively perfect for our family.
As always, feel free to experiment with this recipe to make sure it is perfect for your family too!
My kids love to eat it and I love how easy it is to make.
Spray a 9×13 casserole dish and cover the bottom completely with the meat from a rotisserie chicken.
We use both the white and dark meat for our rotisserie chicken layer.
In a mixing bowl blend cream of chicken soup and sour cream.
Add over the top of the chicken and mix thoroughly.
Melt butter in the microwave and blend with crushed crackers.
Gently mix poppy seeds into cracker mixture.
Spread over top of chicken mixture with a fork.
Pop it in the oven and start your rice cooker and vegetables.
As with all my favorite recipes, your kitchen will smell AMAZING as it bakes!
Serve the poppy seed casserole over the rice.
It turns out so smooth and creamy and warms the soul on a cold day!
We love to pair this dinner with fruit smoothies in the winter time for a kick of antioxidants to help us stay healthy.

I pretty much love casseroles and I love cream soups. Almost all my favorite things to make use cream of chicken or cream of mushroom soup! This looks right up my alley!! Easy, not a lot of ingredients, cream soup (important) and delicious. We’re probably going to try this in the near future!
