In our family, we believe that the more simple the food is, the better it tastes.
Not just because it is easier to prepare (and it is much easier to prepare) but because it is easier to teach our children how to enjoy cooking.
They need to start out slowly at first so that they gain confidence and learn to love it.
I was unexpectedly on bed rest for four months a few years ago and we were SO grateful that we had already started to teach our kids how to cook!
At the time my husband was never home until very late in the evening so I had to rely on my older children being able to prepare meals and feed their siblings dinner each night.
This dinner is so simple to make that any child old enough to safely put something into and out of the oven can prepare it start to finish.
Spray a 9 x 13 glass pan with cooking spray.
Layer a large can of re-fried beans on the bottom of the pan.

Place one pound of ground beef already cooked with taco seasoning on top of the re-fried beans.
Bonus Tip: I buy large packages of ground beef at Costco and brown it all at once, season it with taco seasoning, and then package it into one pound bags and freeze them.
They thaw quickly when you need them and are recipe ready!
Add a layer of Mexican blend cheeses (my favorite ingredient!) and pop it into the oven for 10-15 minutes or until the cheese melts.
Put Lay’s Fritos Scoops on a plate and add a scoop of the hot bean mixture on top of the chips.
Top with sour cream, fresh avocado slices (or guacamole if you prefer), and chopped or sliced tomatoes.
Dinner is done!

Kids are WAY more likely to be excited about helping and learning to cook when they feel confident that they can make recipes start to finish.
